In my house, we tend to eat a lot of Tex-Mex. We love burritos and tacos, not to mention nachos. Yum! Now my husband is a big fan of store-bought salsa from a jar. I on the other hand think it tastes like stinky feet. (Or at least how I think stinky feet taste. I’ve never actually tried to eat feet.) Because of how often we have Tex-Mex in this house, one of the first things I learned to make was my version of salsa, better referred as Pico de Gallo. Salsa refers to any sauce but in an American mind, the first image you pull up is probably drippy, salty, sort of spicy stuff from a jar. I want to disassociate people from that image. This recipe is fresh, delicious and can be eaten by itself with a spoon it’s so good. And it’s super easy! You can’t get any better than that. We’re all busy and eating fresh can sometimes be a challenge. What you need is something you can whip together in five minutes. Yes, you read that correctly. This recipe can be made as fast as you can chop up some tomatoes. It’s fast, tasty, and can be easily modified to fit your spiciness level. What more could you want? (I know, I know, we all want Tom Hiddleston at our door reading poetry and holding a bottle of wine, but we can’t have everything can we.) You can dice the vegetables up as small or as large as you want. Smaller pieces will make a more salsa like consistency where as a larger dice will make it more of a salad. It’s easy to customize and about one of the simplest recipes to follow. Even if you aren’t a big cook you can wow your friends with how amazing it tastes. No matter how busy your life is, you can have something fun to eat. So next time you’re in a hurry and want fresh fast, whip up some of this delicious Pico and dig in. Eat it with a spoon, with chips, on your favorite taco filling. The sky’s the limit! Pico De Gallo
