So, this post would have been better off last week than this one. I knew the Super Bowl was approaching, but didn’t know the exact date. (Can you tell I don’t watch football?) So, for you football fans out there, I’m sorry I didn’t get this to you sooner.
I’ve been hunting for a good cheese sauce recipe for a while. I love nachos. I love them so much, I ate them even when my stomach would rebel afterwards. (Oh, the joy of lactose intolerance.) Finding a replacement that tasted great, satisfied my cravings without upsetting my stomach became a priority.
I’m not a great fan of most store-bought vegan cheese. (I actually haven’t liked any vegan cheese I’ve purchased, but I haven’t tried them all.) One would think that after failing so many times I’d give up, but no, I am an optimist.
And my optimism paid off. I found a great cheese sauce recipe. It’s super easy, doesn’t require expensive ingredients and tastes amazing. I was so shocked I had to make it again to make sure it was real.
You can find the base recipe on the blog veggie on a penny. I’ve made it several times and have made a few flavor changes to kick it up but the base recipe is amazing.
It’s important to remember that you need a blender for this. I tried using an emersion blender but I couldn’t get the right constancy. It’s still delicious but you end up with creamy mashed potatoes and not cheese sauce. (Seriously, put this recipe in a blender and magic happens.)
The base recipe is great on its own but I’ve got a couple variations you can try. For a tasty nacho cheese experience add a can of Ro-tel or a can of dice chilies. If you like ranch dressing, add 3 Tbsp of vegan ranch dressing and a tsp of dried dill for a delicious cheddar ranch sauce that is great on nuggets.
Anyway you choose to make it, this recipe is a great cheese sauce that you can whip as fast as you can boil potatoes. And because it’s made with potatoes and carrots you can feel guilt free for eating it.
